Gooey PB Banana Bars

Gooey and delicious, this simple recipe is a must-try when you have a surplus of ripe bananas on hand.

  • 5 ripe bananas

  • 2 eggs

  • Splash of vanilla

  • 1 cup unsweetened peanut butter

  • 1 cup all-purpose flour or 2 cups almond flour

  • 1/2 cup protein powder of choice

  • 1/2 teaspoon baking soda

  • Optional mix-ins: chocolate chips

  1. Preheat oven to 350°F and line an 8x8” pan with parchment paper.

  2. Add wet ingredients to a mixing bowl and mix, then add dry ingredients and mix until combined. Add optional mix-ins and stir.

  3. Pour batter into pan and bake for 20-25 minutes until just slightly set in the middle. The center should be gooey.

  4. Serve warm immediately or the next day chilled in the refrigerator. Serve with drizzled peanut butter, melted chocolate, and/or honey.

    Notes: Our preferred variation is using all-purpose flour or 1:1 gluten free all-purpose flour (King Arthur) and two handfuls of dark chocolate chips (Hu or Bake Believe). We like to use peanut butter protein powder (Transparent Labs) in this recipe. You can sub protein powder for more flour. Optional: drizzle with melted peanut butter or chocolate to serve. You can add a spoonful of maple syrup or honey to the batter before baking if bananas are not ripe.
