Protein Alfredo Sauce

A classic comfort food dish with a protein-packed twist!

  • 1/2 cup milk of choice

  • 1 1/2 cups cottage cheese

  • 2 cloves garlic, minced

  • Splash of olive oil

  • 1/2 cup parmesan cheese, grated

  • Large pinch of salt, pepper, and Italian seasoning

  • To plate: cooked pasta, cooked and crumbled bacon, cooked and sliced chicken breasts, fresh basil to garnish

  1. Blend the milk and cottage cheese in a high speed blender until completely smooth.

  2. Heat a drizzle of olive oil in a saucepan over medium heat. Add garlic and sauté for a few minutes.

  3. Turn the heat down to very low and pour in remaining Alfredo ingredients. Stir just until cheese is melted and remove from heat. Be careful to not overheat or the sauce will curdle.

  4. To serve, add cooked noodles of choice to a plate with the warm Alfredo sauce, crumbled bacon, and sliced chicken. Garnish with fresh basil and more grated parmesan.

    Notes: Our preferred cottage cheese brand is Good Culture. We use raw milk as the milk in this recipe (I think a high fat option tastes best) and Banza pasta for noodles. You can sub for zucchini noodles or steamed broccoli. You can sub garlic cloves for garlic powder. The Alfredo sauce may have a slight texture, but with thorough blending, most clumps should smooth out. Thin the sauce with additional milk or pasta water if desired. If the cottage cheese curdles, add it back to the blender to smooth.
