Banana Bark

A no-rules recipe with endless variations—there’s something for everyone to love!

  • Bananas, sliced

  • Unsweetened nut butter

  • Chocolate chips + a spoonful of coconut oil

  • Optional garnishes: coarse sea salt, nuts

  1. Place sliced bananas on a small baking sheet lined with parchment paper. Fill the tray and cover with another piece of parchment paper. Press down to slightly flatten the banana slices and remove paper.

  2. Drizzle the banana layer with nut butter of choice. Freeze for 30 minutes or so while you melt the chocolate.

  3. Melt the chocolate with a spoonful of coconut oil until completely smooth. Drizzle the nut butter layer with melted chocolate and gently spread over the top being careful to not disturb the bottom layers. Sprinkle with optional garnishes. Freeze until bananas are solid or overnight.

  4. To serve, crack or slice with a knife. Eat immediately.

    Notes: Our preferred variation is using peanut butter (Kirkland) and dark chocolate (Hu or Bake Believe). You could sub the banana layer for plain yogurt sweetened with honey or pitted and smashed dates.
