Protein Pancakes

Fluffy, protein-packed, and made with just 5 simple ingredients—these perfect cottage cheese pancakes are a game-changer!

  • 1 cup cottage cheese

  • 1 cup rolled oats

  • 5 eggs

  • 1 tablespoon maple syrup

  • Large dash cinnamon

  1. Add all ingredients to a blender and blend until smooth.

  2. Cook on a skillet lightly greased with butter or avocado spray on medium-low heat, flipping once after small bubbles appear on top and bottom side is slightly golden brown. Garnish with more syrup, a sprinkle of cinnamon, and fresh fruit!

    Notes: We like to prep many at once, freeze or refrigerate, and pop in the toaster when ready to eat. Our favorite cottage cheese is Good Culture.
