S’mores Ice Cream Bars
You have got to try my easy JERF version of s'mores ice cream bars! All the delicious flavor with just a few simple ingredients.
Crust
14 ounce bag Simple Mills Sweet Thins (or any graham cracker)
3 tablespoons milk or water
Ice Cream
1 pint heavy whipping cream (see notes for subs)
1/4 cup honey
Splash of vanilla
Optional: 1 cup protein powder
Chocolate Drizzle
1 cup chocolate chips, melted
Add crust ingredients to a food processor and blend until a crumble forms. Press down evenly in a large baking dish lined with parchment paper.
Add cream, honey, and vanilla to a bowl. Using a mixer, whip on high speed until cream becomes thick and little peaks form when removing the attachment. Add optional protein powder and stir by hand. Add ice cream layer on top of crust and spread evenly. Freeze for at least 2 hours, or overnight, until firm.
Drizzle melted chocolate over ice cream layer and return to freezer for 10 minutes. Slice into bars and enjoy!
Notes: To make a low calorie and/or convenient version of this recipe, use a tub of store-bought, low-fat whipped cream (skip the whipping step, no brand recommendation) in place of heavy whipping cream. You can also use a sweetened protein powder and omit the honey. Add any flavored protein powder to mix things up. Our preferred is vanilla whey Promix. To make a dairy-free version, use coconut cream solids in place of heavy cream. Our preferred dark chocolate is Hu or Bake Believe. You can add fresh fruit, a drizzle of caramel or PB, or other mix-ins to the ice cream layer if desired. You can double up the ice cream layer for an extra thick bar!
