Cinnamon Roll Baked Oats & Protein Icing

Ingredients:

  • 1 cup rolled oats

  • 1 cup all-purpose flour

  • 1 tablespoon cinnamon

  • 2 teaspoons baking powder

  • 1/4 cup coconut sugar

  • Pinch of salt

  • 2 eggs

  • 1 cup milk of choice

  • 1/4 cup butter or coconut oil, melted and cooled

  • 1/4 cup maple syrup

  • Splash of vanilla extract

  • Optional protein icing topping: 2 cups plain yogurt, splash of maple syrup, 2 scoops vanilla or cinnamon roll flavored protein powder, sprinkle of cinnamon

Directions:

  1. Preheat the oven to 325°F and spray a 9x13” baking pan with oil.

  2. Add all wet ingredients to the baking dish and mix with a fork. Add dry ingredients and mix until combined. Let sit for a few minutes.

  3. Bake for 25-30 minutes or until set in the center and golden brown on top.

  4. Make optional protein icing while baking. Mix the ingredients in a bowl and adjust the maple syrup amount to complement the sweetness profile of your protein powder.

  5. Once baked oatmeal has cooled slightly, top with protein icing and serve immediately or let chill in the fridge overnight for an extra soft texture!

    Notes: You could sub regular all-purpose flour for 1:1 gluten-free all purpose flour (King Arthur) if desired. We love Chosen avocado oil spray. If you prefer to use all rolled oats, you can sub 2 3/4 cups of rolled oats for the all-purpose flour. We like to use Promix vanilla protein powder and around 2 tablespoons of maple syrup in the icing.
