Fudgy Brownie
The mere mention of "fudgy" in this recipe requires no further persuasion. Given the choice, I would opt for a chocolate dessert every day.
½ cup coconut oil, ghee, or butter, melted and cooled
Splash of vanilla extract
4 eggs
½ cup all-purpose flour or unsweetened nut butter
½ teaspoon salt
1½ cups coconut sugar
½ cup unsweetened cacao powder
Chocolate chips
Preheat oven 350°F and line an 8x8" pan with parchment paper.
Combine wet ingredients in a mixing bowl with a mixer or whisk, add dry ingredients, and mix until smooth. Fold in two heaping handfuls of chocolate chips.
Add batter to pan, spreading with a spatula.
Bake for 30-35 minutes or until the center is just set. Let cool before slicing and serving.
Notes: The “or” separating the flour ingredients indicates the grain and grain-free variations. Our preferred variation is using butter, dark chocolate chips (Hu or Bake Believe), peanut butter (Kirkland), chilled in the refrigerator, and topped with a scoop of vanilla ice cream.
