Chicken Nuggets

This recipe will make you rethink eating out for a homemade version of your favorite childhood meal.

  • Fried pork rind crumbs

  • Ground chicken

  • Salt, pepper, and seasonings of choice

  1. In a mixing bowl, combine ground chicken with salt and pepper and desired seasonings.

  2. Add pork rind crumbs to a shallow plate and drop small clumps of chicken on top. Turn the nuggets to coat the outside completely.

  3. For best results, use an air fryer. Place nuggets in the air fryer basket and slightly flatten the tops (optional: lightly spray with oil before cooking).

  4. Cook at 400°F for 15-20 minutes or until crispy and cooked through. Serve immediately.

Notes: Our preferred variation is using pre-ground pork rinds (Pork Panko), seasoning with salt and pepper, and serving with ketchup (Primal Kitchen) and our refrigerator pickles. You could add garlic powder to the seasoning. To make chicken tenders, thinly slice chicken breasts and use the same methods above. You can cook in the oven on a wire rack.
