Granola

Preparing a batch of this crunchy, chunky, and sweet granola in advance adds a delightful touch to various dishes throughout the week.

  • Maple syrup

  • Vanilla extract

  • Cinnamon

  • Desired granola ingredients: rolled oats, unsweetened coconut flakes, nuts, seeds

  1. Preheat oven to 325°F.

  2. Add granola ingredients on a baking sheet lined with parchment paper. Drizzle with maple syrup, while mixing, until all ingredients are wet and coated. Add a pinch of salt, a sprinkle of cinnamon, and a splash of vanilla extract. Mix again.

  3. Spread granola evenly into a thick layer on the tray. Bake until deep golden brown. This could take anywhere from 30-60+ minutes depending on how thick the layer is.

  4. Remove from the oven and cool completely before crumbling.

    Notes: Our preferred variation is using four handfuls of rolled oats (One Degree) as the base, and one handful each of unsweetened coconut flakes, pepitas, shaved almonds, chia seeds, crushed pecans and cashews, and a sprinkle of cinnamon. There are no rules or measurement guidelines. Feel free to add as much or as little of each ingredient as you would like as long as they are well coated in syrup before baking. You can add chocolate chips and dried fruit to the mix after baked and cooled. We like to eat it as a parfait served with plain yogurt, fresh fruit, and mint leaves. You can also enjoy as cereal with your choice of milk or on top of an acai bowl or a smoothie.
