Mayo
This homemade mayo recipe serves as the foundation for numerous other dishes in our recipes. Among the first homemade sauces we crafted, it marked the initiation of our JERF journey.
1 cup avocado oil
1 egg
Small spoonful of brown mustard
Pinch of salt
Splash of lemon juice
Optional: plain greek yogurt
Add all ingredients to the cup that comes with the immersion blender.
Place immersion blender stick on the bottom, making sure it's covering the egg yolk. Blend on high, and keep it pressed against the bottom for 15 seconds.
Once mayo begins to emulsify, slowly move the immersion blender up and down until oil is blended completely. Optional: add equal parts plain greek yogurt to the end product for an extra fluffy texture.
Notes: We like to use our favorite avocado oil (Chosen) when making this mayo and always plain greek yogurt. Fresh eggs work best. You can add desired seasonings, such as a sprinkle of garlic powder or 2-3 chipotle peppers in adobo sauce. Avoid adding it to extremely hot dishes as it will melt back into a liquid oil.
