Beefy Protein Queso Dip

This beefy, protein-packed queso dip isn’t just a snack—it’s a filling, flavorful option that works as a meal too. Scoop it up with veggies or chips, share the whole bowl with a friend, or portion it into two meals. With 40g of protein and only 250 calories per serving, it’s delicious, satisfying, and hearty!

  • 2 cups cottage cheese

  • 2.5 tablespoons taco seasoning

  • 10 ounces diced tomatoes with green chilies

  • 1/2 pound ground beef, cooked

  • Optional add-ins: spoonful each of green chilies, corn, black beans (drained and rinsed), shredded cheese

  • Optional garnishes: green onion, cilantro, pickled jalapeños

  1. Add cottage cheese, taco seasoning, and the liquids from the canned tomatoes to a food processor and blend until completely smooth, scraping down the sides if necessary. Add a tablespoon at a time of water or milk to reach desired consistency (I added about 2-3 tablespoons).

  2. Stir in beef, tomatoes, and any other desired add-ins.

  3. You can heat in 30 second increments in the microwave or on the stovetop on low until warm (don’t overheat otherwise it will separate). Or you can eat cold.

  4. Add mixture to a bowl and top with optional garnishes and serve with vegetables or chips of choice.

    Notes: We like Good Culture cottage cheese and Siete taco seasoning. You can use an immersion blender or a blender instead of a food processor but it may be more difficult to achieve the perfect consistency.
