Crunchy Baked Tacos
Ground meat with its quick cooking time serves as an ideal protein option. We always have ingredients for this meal on hand to whip up in a minute's notice.
Ground turkey, chicken, or beef
Mix-ins: plain yogurt, cheese, refried beans
Tortillas
Optional garnishes: guacamole, salsa, shredded lettuce, cilantro, limes
Preheat oven to 400°F.
Cook ground meat in a skillet on medium-high heat, breaking apart with a spatula until browned and cooked through. Season as desired. Add desired mix-in to help bind the ingredients together and stir.
Lay tortillas flat on a baking sheet. Spread meat mixture on half of each tortilla and then gently fold over the other half and press down. Fill the baking sheet.
Bake for 15 minutes and then broil for 3-5 minutes or until lightly golden brown. Top with optional garnishes and serve.
Notes: Our preferred variation is to make tacos using tortillas (Siete) stuffed with ground beef, taco seasoning (Siete), and a heaping spoonful of refried beans (Siete) and/or a heaping handful of cheese per one pound of ground meat. After baking, top with guacamole and salsa.
