Breakfast Pizza

Kickstart your day with this delicious breakfast pizza, featuring a crispy grated potato crust.

  • 4 russet potatoes, grated (ring liquids)

  • 2 eggs

  • Breakfast toppings: could include eggs, cheese, vegetables, cooked bacon or sausage

  • Optional garnishes: fresh herbs, avocado

  1. Preheat the oven to 400°F.

  2. Combine grated potatoes, eggs, and seasonings of choice in a large bowl. We typically add salt, pepper, and garlic powder.

  3. Spread potato crust mixture thin on a 12” pizza pan and bake for 30 minutes or until lightly golden brown. 

  4. Add desired toppings. If adding eggs, crack right on top along with any cheese, vegetables, and cooked meat. Bake again until crust is crispy and toppings are warmed to your liking.

  5. Remove from the oven and garnish with fresh herbs and sliced avocado. Serve warm.

Notes: We prefer to grate potatoes using a food processor. We enjoy adding rosemary as a fresh herb. To spice things up, you could use sausage gravy as a sauce layer.
