Protein Tortilla Quiche
Looking for a quick, high-protein breakfast idea? With simple ingredients and endless customization options, my soft and deliciously fluffy tortilla protein quiche is perfect for using up whatever you have on hand.
6 eggs
1 cup cottage cheese
Tortilla(s)
Optional mix-ins: a handful each of chopped vegetables, shredded cheese, cooked ground sausage or bacon
Optional garnishes: fresh herbs, avocado, hot sauce, everything but the bagel seasoning
Preheat the oven to 350°F.
Line a pie pan with your favorite tortilla, making sure the edges are covered.
Whisk cottage cheese, eggs, and a pinch of salt and pepper in a bowl. Pour mixture over tortilla dish. Add optional mix-ins, ending with cheese if using.
Bake for 40-45 minutes until center is cooked through. Garnish as desired and enjoy!
