Protein Tortilla Quiche

Looking for a quick, high-protein breakfast idea? With simple ingredients and endless customization options, my soft and deliciously fluffy tortilla protein quiche is perfect for using up whatever you have on hand.

  • 6 eggs

  • 1 cup cottage cheese

  • Tortilla(s)

  • Optional mix-ins: a handful each of chopped vegetables, shredded cheese, cooked ground sausage or bacon

  • Optional garnishes: fresh herbs, avocado, hot sauce, everything but the bagel seasoning

  1. Preheat the oven to 350°F.

  2. Line a pie pan with your favorite tortilla, making sure the edges are covered.

  3. Whisk cottage cheese, eggs, and a pinch of salt and pepper in a bowl. Pour mixture over tortilla dish. Add optional mix-ins, ending with cheese if using.

  4. Bake for 40-45 minutes until center is cooked through. Garnish as desired and enjoy!

Notes: We used Siete tortillas and tore a few to fill in the gaps, as they're a bit smaller in size. We like to to add mix-ins such as chopped spinach, tomatoes, bell pepper, onion, and add feta or goat cheese. We enjoy adding fresh herbs such as cilantro and chives as garnish. Our preferred cottage cheese is Good Culture.
